Summer Corn & Black Bean Salad

Ingredients:
– 3 ears of fresh, sweet corn
– 1-15 oz can black beans, drained & rinsed
– 2 medium-sized tomatoes, diced
– 3 garlic scapes (or scallions), chopped
– ½ cup cilantro, chopped (optional)
– 2 tbsp olive oil
– Salt & pepper to taste
Directions:
- Place drained & rinsed black beans into a large bowl. Add diced tomatoes, garlic scapes or scallions, and cilantro if using.
- Remove kernels from raw corn with a knife and add to bowl.
- Drizzle mixture with olive oil, sprinkle with salt and pepper to taste.
- Mix ingredients together and serve.
