Paleo Brussels Sprout & Sweet Potato Hash

Ingredients:

– 4 slices thick-cut bacon

– 1/2 red onion, diced

– 2 sweet potatoes, peeled and cut into 1/2-inch cubes

3 garlic cloves, minced

– 20 Brussels sprouts, sliced and stems removed

– 1 tsp cumin

– 1 tsp smoked paprika

salt + pepper to taste

– 8 large eggs

 

Directions:

1. Heat a large skillet over medium heat and add bacon. Cook until crispy and fat is rendered.  Remove bacon with a slotted spoon and let drain on a paper towel, setting aside.

2. Slightly reduce heat under skillet – add onion and sweet potato, tossing to coat. Cook until sweet potato has softened, about 6-8 minutes.

3. Stir in garlic, cumin and smoked paprika and cook another minute.

4. Add sliced Brussels sprouts to pan and stir to combine.  Cook until soft, approximately 5 minutes.

5. Crumble bacon – add to hash.

6. Poach or fry eggs, cooking until desired doneness.   Place eggs atop hash – serve immediately.
