Overnight Oatmeal

Overnight Oatmeal

 

Prep Time: 15 minutes

Refrigerate overnight

 

 

 

Ingredients:

  • 1/3 cup rolled oats (not quick-cooking or steel-cut)
  • 1/3 cup almond milk
  • Pinch cinnamon
  • Pinch nutmeg
  • ¼ tsp almond extract
  • ¼ tsp vanilla extract
  • 1 tsp coconut crystals (or other natural sweetener)
  • ½ banana
  • 1 tbsp slivered almonds

 

Directions:

    1. Combine all ingredients except banana and almonds in an 8 oz. glass Mason jar.  Shake.
    2. Chop banana into small pieces.  Mix into jar.
    3. Refrigerate jar 10-12 hours, or overnight.
    4. Before eating, remove metal lid to heat in microwave until warm, about 1 minute.  Add additional almond milk to desired consistency.  Top with slivered almonds.  Enjoy!
