Mint Chocolate Chip Coconut Milk Ice Cream
Yield: ~ 6 cups (1 1/2 quarts) ice cream

Equipment Required: Ice Cream Maker
Ingredients:
– 2- 14 oz cans regular (full fat) coconut milk (use canned only)
– 1/2 cup raw agave nectar
– 1 tbsp arrowroot or cornstarch
– 1 tsp peppermint extract
– 1/4 tsp salt
– 3/4 cup chopped dark chocolate
Directions:
- Add coconut milk, agave nectar, arrowroot or cornstarch, peppermint extract and salt to blender or food processor. Mix well.
- Add mixture to ice cream maker and process following manufacturer’s instructions.
- When mixture starts to thicken, add chocolate chips.
- Continue to process using ice cream maker until further thickened. Place in freezer to harden to desired consistency.
