Gluten Free Brownies
Yeild: 9-12 brownies Prep Time: 10 mins Cook Time: 30 mins Temperature: 350°
Ingredients:
– 6 tbsp salted butter
– 8 oz semi-sweet chocolate
– ¼ cup sugar
– 2 large eggs, room temp.
– 1 tbsp Dutch Process cocoa powder
– ¼ cup tapioca flour
– Optional: 1 cup chopped nuts
Directions:
- Line the inside of an 8-inch square pan with foil up the sides to the rim. Lightly grease the foil with butter. Preheat oven to 350°.
- Melt butter, then add chocolate in a medium saucepan over very low heat on stove top, stirring constantly until smooth.
- Remove from heat and stir in the sugar, then eggs, one at a time.
- Add sifted cocoa powder & tapioca flour to chocolate mixture. Beat batter oh high for one minute, until smooth.
- Add nuts, if using, then scrape the batter into the prepared pan.
- Bake for 30 minutes, or until brownies feel just set in the center. Do not overbake. Remove from oven and let cool completely before removing from the pan and slicing.
